2-4 Corn Tortillas
1 can Cannellini beans
Salt, Pepper, Olive Oil, Rosemary, Chili Powder, Garlic powder
Drain and rinse beans, warm with olive oil and rosemary.
Chop all veggies
Sauté spinach with salt and pepper and olive oil, set aside.
Warm tortillas and fry eggs over easy.
Plate…Tortilla then beans topped with eggs. Stack all veggies liberally. Dress with Salt, Pepper, Olive Oil, Rosemary and Chili Powder to taste.
